I Love Food

I got a new planner. It’s like one of my favorite things to do. Plan stuff. So I’m really excited for fresh new pages to write things down. I always plan my weeks, workouts, tasks to do, chores, etc. It keeps me sane. So yeah, I’m pumped.

So, it’s already January 5th. Yipes. That happened fast. This coming week is my first full week back at work and I’m nervous, anxious, and loads of other feelings. Just trying to enjoy every minute of this weekend. I already got in a nice workout I’ll post below and went to Target. I love going to Target at 7 AM because I’m literally the only non-employee there. Everyone is super friendly and I can get in and out without getting stuck behind people who block the aisles with their carts.

I got my planner, some almond milk creamer, chocolate milk, and deli ham so I could make avocado toast. YUM. Oh and dental floss because I’m trying to be better about that.

I also made a pit stop at Starbucks because lately I’ve been obsessed with their cold foam blonde cappuccinos. They are literally everything to me right now as I’m trying to cut back on sugary crap. I think a grande is like 60 cals with little to no sugar so I’m all about that. The foam on top is a tasty little treat. I’m going to try the cappuccino setting on my cafe barista later today to try to re-create this tasty beverage.

Oh, back to avocado toast. I love making this when I’m not rushed because it takes a little bit more time than my typical bowl of oats. I got some fun bread at Aldi (I love this place…they have great healthy finds at the cheapest prices and I’m on a strict budget for 2019).

Sam will not eat this…he says he doesn’t like birdseed

I toasted the bread, attempted to make some fried eggs, then assembled my toasts. First ya smash the avocado on your toast, then ya sprinkle some garlic powder and a squeeze of lime juice. Then top that with my fresh deli ham and the fried-ish eggs. It’s so good. I could eat this all day.

Okay so now for today’s workout…it was a fun one!

4 Rounds for time:

Row 500 meters as fast as possible (this took me a little over 2 min)

20 wall balls

10 heavy cleans

Give it a try, I think the whole thing took around 15-20 minutes to complete. Speedy and sweaty, just the way I like them 🙂

Today it’s pretty much going to be Spring so I plan to spend a lot of time in the fresh air. I also need to do some serious house organization, meal prepping, wine drinking, baby snuggling, laundering stuff as well. Last night I started going through Harry’s clothes to put away the things that don’t fit him anymore and started crying because he is growing so fast. He’s starting to outgrow 6 month clothes already and he’s not even 4 months old. Big boy ❤

For meal prep I’m hoping to make some tuna salad, chicken, rice, and veggies, and chocolate pumpkin muffins. Maybe some homemade coffee creamer as well. OH also, my other new fave thing…carrot cake oats in the instant pot. My mom got me an IP cookbook for Xmas and this recipe caught my eyes because DUH I love carrot cake and oats. You literally take shredded carrots, crushed pineapple, raisins, steel cut oats, and water and add that to the instant pot. Let it cook on high pressure for 10 minutes and naturally release the steam. Jim-any Crickets, fresh oats in 10 minutes. Yes plz.

Yesterday I topped mine with vanilla yogurt and a dollop of cream cheese to pretend it was cream cheese frosting and it was one of my better decisions. Sam said I shouldn’t eat so much dairy. I told him cream cheese is more like butter than dairy…I’m right right?

Okay, enough food talk, I’m getting hungry again. LOL. Gotta fly. Have a fab day.

Be Grateful. Be Thankful. Be Joyous. Give Love.

Hello.

Harry is napping so I figured I’d take a little time to do some house chores and write a blog post. It’s been a few days but that’s OK. Life gets busy. Ruthie is currently snoring next to me as I sip a vanilla latte from Starbucks. All is good in the world.

Sam tells me I’m never appreciative for the things I have in life so I’m trying harder to think about that every day. He is right. There’s a warm roof over our head. Sam and I have the best dog and son in all the land. I am able to drive a car that has an amazing heated seat that burns my bum. Being able to work allows us to put meals on the table (or in our case the arm chair of the couch). Nature has graced our house with a lovely Fraiser Fir this year. Yes, I am thankful. I also appreciate Sam so much. He is such a wonderful dad and makes us laugh every day. He is one of the hardest workers I know and would do anything for his family. Yes, we are lucky.

Polo Baby loves daddy

Last week was a very festive one. Harry and I spent some time with Grandma Dee making cookies and other Christmas treats. Of course we did the classic sugar cookie with the most tasty frosting. I love decorating cookies but typically by the end I get bored and just sprinkle sugars on them. This year was different. Every cookie got time spent on it. Every cookie was different. I may have eaten 3 dozen by myself. Usually I’d be like wtf you gross human. But this year is different. I am enjoying whatever I want this holiday season because I can always get back on the healthy eating train in 2019. PS can you believe it’s almost 2019? I think it’s gonna be a good year 🙂

Santa’s workshop

Gramma Dee and I also made chocolate dipped pretzels and the pretzel rings with Hershey Kisses and M&M’s. So easy and so tasty. She also made toffee and fudge and let me tell you…it tasted like it came straight outta the bakery.

Yesterday we went to Sam’s school and Harry met Santa. It was just a blast. He was a little unsure in the beginning but then realized this guy is going to be his favorite every December 24th for the next oh…10 years. He even smiled at Santa as he tugged on his beard. Oh to be a child.

Today we are planning on decorating our Christmas Tree. Yes, we got a real tree this year and the house smells amazing. I’m planning on turning on Santa Clause or Elf and drinking a large peppermint mocha. I’ll post a pic later.

I also bought a whole chicken to try in the instant pot for dinner. I sure hope it turns out! Trader joes has all the fixings for a lovely chicken dinner complete with stuffing AND mashed potatoes. All that’s missing is the pumpkin pie but we have pretzels to eat so I guess that will work.

Hoping to get a speedy workout in here sometime today but lately, if I miss a workout I don’t care because carrying an 11 pound baby around the house is a workout in itself. Maybe we will walk up and down the stairs like 10 times or something IDK. LOL.
